2 pounds kale
1 cup chopped onion
½ pound smoked turkey breast
½ teaspoon red pepper flakes
2 tablespoons cider vinegar
Wash the kale thoroughly under cool running water, then shake off excess water and pinch the leaves off the stems. Place the leaves, onion, turkey breast and pepper in a large, heavy skillet. Cover and cook over medium heat for 20 minutes or until the kale is tender. Add the vinegar and transfer to a warm serving dish. Makes six servings.
